Watch 6 Classic. Samsung Pay while recording activity

Am I doing something wrong? I can't open Samsung Pay on my Watch 6 whilst using it to record an activity on Samsung Health. If I hold the bottom button to launch Pay, it pauses/resumes the activity. If I return to the home screen the hold the bottom button, nothing happens. If I try to launch Pay from apps, it tells me to hold the bottom button!

I don't want to stop recording a 5 hour hike just so I can pay for my coffee!

Any ideas around this?

Workaround more than solution, but Google Pay works while recording an exercise with Samsung Health.

No correct and it is a pain. I just tend to use Samsung Pay on my phone in those instances but does mean you've got to have your phone.
