Galaxy watch ultra keeps on locking whilst I'm wearing it and sometimes even after I've took it off and put it back on, I will put in cide to unlock it and leave if for a few seconds and it will lock instantly again.

Sorry I haven't got a solution for this right now, just letting you know I'm not ignoring your post. I'll look into this and get back to you.
The first thing you can do is search this community and see if there are any earlier entries with the same issue. You might be surprised

I have taken a look but haven't seen anyone with this issue for the watch ultra so far

There is a temporary fix. I've just remembered. Please try this and let me know if it helps.

Go to your watch
Settings
Security and privacy
Scroll down to Wrist Detection and toggle this off.

Incidentally, I've just checked mine and mine is set to off.

But if I do this, then do I completely lose the lock feature as I want it to lock when I'm not wearing it?

This is true. Like I suggested this is only a temporary fix to your annoying problem.

I've only had to watch 2 weeks and I've had so many problems. It's such a shame as it's such a beautiful watch

Yeah, i just watched it. Although it will fix the problem, it also means I lose a feature.

I think he was explaining it's a software issue, and hopefully, there will be a fix soon. Usually, this comes along side security updates.
I have a watch 6 and 7, and your issue has happened to me. But after watching the video, it reassured me of its software rather than hardware.
I'm sorry, I don't think there's a quick fix for this issue, unfortunately..
