I have just ordered a galaxy watch 5 Pro watch how do I transfer my apps from my old galaxy watch 3

You can't the Galaxy Watch 3 and Galaxy Watch5 use completely different operating systems the GW3 uses Tizen where as the GW5 uses Android Wear

You will find apps for Gw5 on the Playstore rather than the Samsung galaxy store and can download them from there. Chances are most if not all of your watch 3 apps will be available apart from the Tizen system watch faces on your watch 3. ( A lot of the newer Wear os watch faces for Gw5 allow more options for " complications " etc on the faces )

I moved from GW4 Classic to GW5 Pro recently and had no issues setting up from a GW4 backup.
