There is voice controls in the settings of the buds which can be turned off.
Daily Driver > Samsung Galaxy s²⁵ Ultra 512Gb ~ Titanium Black.

I have an S24 Ultra with one ui 7 beta 7 and I noticed it doing the same as what you are saying. It actually started after the beta 6 drop. Never did it until then.
