Does it damage the tablet and battery to keep it plugged in all night?

As long as you enable battery protection, not really no.

Ideally set it to stop charging at 80%

I have set it currently to adaptive.

If it's just the odd night, not so much. If it's like this for say the majority of a year, definitely will shorten it's longevity.
