Hi @gingerwinger Have you just updated to One UI 5.1 and was this by official means? If wiping the cache partition has not helped you could try a Factory Reset ,even if some view it as a bit of a hassle. Ensure you back up Data before doing so. However the device will soon stop receiving security updates and will thus be more vulnerable. https://www.gsmarena.com/samsung_galaxy_s20_series_extended_software_support-news-62381.php
I do not work for Samsung or make Samsung Products but provide independent advice and valuable contributions.

Usually Clearing the Phone's System Partition Cache Files Section does help but I see you've already carried this out.
Are you able to ask a question via your Samsung Members App.
As @JAMES4578 says a Factory Reset 👍 is an option or go through https://www.samsung.com/uk/support/repair/
A hard reboot may help > How-to-force-reboot-your-samsung-galaxy-smartphone/
Daily Driver > Samsung Galaxy s²⁵ Ultra 512Gb ~ Titanium Black.
The advice I offer is my own and does not represent Samsung’s position.
I'm here to help. " This is the way. "

I have the exact same problem with my M23 5G 😞 tried factory reset, but it keeps the faulty update. So all those npc advice are useless. There is a hard issue within the code of that update.
Since the phone is not stable and crashes all the time, the only way to get this possibly fixed is to use a manual bootloader and put an older version of one UI on it. ( thats what I assume, please proof me wrong!)
This will be my last Samsung device. I am sick of those corpos.

After performing any major software update, it is then advised to update all of your apps as well. Especially with this being an older update, many app developers will have patched any problems with their apps by now. Make sure to check both the Galaxy Store > 3 Lines > Updates. As well as the Play Store > Tap the round icon in the top right > Manage Apps and Devices > Updates Available.
If you continue to encounter app crashes, latency and reboots, try your phone in Safe Mode to rule out a third party app interfering. Swipe down from the top of the screen with 2 fingers > Tap the Power icon in the top right > Long press Power Off > Tap the shield and the phone will restart.
Run the phone in Safe Mode for a couple of hours, using the apps that are available, and monitor the performance. Safe Mode is a handy tool that disables all third party apps, so if this behaviour stops occurring in Safe Mode, this confirms there is an app at fault. In which case, you would need to uninstall your downloaded apps one by one, until you find the culprit. Once found, either keep it uninstalled, or contact the app developer for a fix.
