Does anyone know why the Samsung galaxy s21 fe 5g didn't get the one ui 6 update today the 5 Dec 2023?

This is pure speculation and even if true and won't land on every device on this day. It may be the day that start to roll it out but before it reaches 100 % users it will take months

Where did that information come from?

Samsung doesn't publish OS Updates lists for this very reason, updates are subject to change as glitches and bugs are worked on and fixed.

A number of websites have posted schedules but they didn't eminate from Samsung.

Secondly, please remember updates are released on batches and it can take several weeks for all devices in a model series to receive the update. This is due to the hundreds of millions of devices Samsung need to update.
