Galaxy S21 will not update

Tried installing regular software update 3 times in the past few days yet at the very end it comes up with "failure to update hardware, contact Samsung service centre".

What could this be?

If your using the update option in your phone's software update section @Planeto then try Samsung Smartswitch as an alternative.

Ensure you have ample space left in your phone's internal storage too please.

If you haven't delete some rarely or unused items like apps etc.

And clear your phone's System Partition Cache Files Section.

Info here  Clear Cache Files from the phone's System Partition Section  > https://www.samsung.com/uk/support/mobile-devices/how-do-i-clear-the-cache-on-my-device/ You may need to insert your earphones or hook upto a powered On Laptop to access the Clear Partition Section. This may help with lag or stutters as this clears the phone of old/unused or broken cache files.There is also a Repair Apps option in the Menu System too.

A very last resort could be to back up and Factory Reset which may help but isn't a guarantee.

A Samsung Service Centre will be able to help too.
