Trying to update a contacts photo in the phone book but don't know how to do it

In the contacts app, select a contact, hit the edit button at the bottom of the screen, then tap on the current photo and then choose your new photo from Gallery.

Thanks for the help, didn't realise you had to tap the contact photo to edit it 👍
