I've found a solution, although it takes one step more than before. Scroll down to the activity forecasts (for example, "Running") just under the weekly forecast.
Tap this panel and it will take you to you the "Running forecast" on Weather.com. Scroll down a bit and you'll see the pollen overview.
However, if you want to see the entire pollen breakdown, you'll have to Tap the "Today" button located at the bottom left corner.
From here, scroll down until you see "Seasonal Allergies and Pollen Count Forecast". Tap this.
Then you will see the full pollen breakdown for the current day in your area.

It’s not just you! Many users have noticed that pollen count data has disappeared from certain weather apps (like Apple Weather, AccuWeather, or others), and it’s super frustrating—especially for allergy sufferers who relied on it.
Data Provider Changes – Some weather apps rely on third-party sources (like The Weather Channel, BreezoMeter, or Aeris) for pollen info. If the partnership ended or the API changed, the feature may have been dropped.
App Update Glitch – Sometimes updates accidentally remove features (or hide them under a new menu). Check if pollen data is buried in an "Air Quality" or "Health" subsection.
Regional Limitations – Pollen tracking might still be available in some countries but removed in others due to licensing.
Monetization Shift – A few apps now lock pollen data behind premium subscriptions (looking at you, AccuWeather).
✔ Try Alternative Apps – These still show pollen counts (often with more detail):
Pollen Wise (crowdsourced allergy reports)
WebMD Allergy (forecasts + symptom tips)
MyRadar (with pollen overlay)
The Weather Channel (if your old app dropped it)
✔ Check Hidden Settings – On iPhone, try:
Weather App → Tap the map icon (bottom-left) → Tap the three-line menu → See if "Pollen" is toggleable.
✔ Submit Feedback – Complain to the app developer! The more requests they get, the likelier it’ll return.
Pro Tip: Google "pollen forecast [your city]" for direct websites (like Pollen.com) that still track it.

@ChristinaMG2604: I have checked the Weather Channel widget, and Pollen count information should be visible on the home page by scrolling all the way to the bottom. For clarity, I'm seeing the following in my region:
Pollen - High
Running - Good
Driving difficulty - None
