Please get this garbage UI off my phone. This combined with the terrible changes to the earbuds has me ready to ditch Samsung permanently.
The forced updates when I hate the way the UI is are wrong. I had something I had a lot of money for that I liked and Samsung keeps changing the design. I am not ok with where things have moved to, specifically the new layout of the quick panel, the new app carousel, Google Gemini being FORCED onto my phone, search bar being moved to the bottom of app screen and the notofications. I'm so sick of this company.

You'll be please to hear that some of these features you have mentioned can be configured back to the old way, however, it wouldn't be possible to revert the entire UI back to a previous one.
If you prefer the old style of having your notifications and Quick Settings together, that's absolutely possible. All you need to do is swipe down on the right hand side > Tap the Pencil icon up top > Panel Settings > Notification and Quick Settings View > Together.
To alter your app carousel back to a horizontal scroll instead of vertical, bring up the app's menu > 3 dots (bottom right) > Sort > Custom.
You can choose which digital device assistant you wish to use if you are not a fan of Google Gemini, or set it to none instead, by heading into Settings > Apps > Default Apps > Digital Device Assistant.
You mentioned you are facing issues with your earbuds, it would be worth making a post in Galaxy Wearable with further details. That way our Wearable community will be able to support you further.

I really do not think there is a massive change with one Ui7 and all companies upgrade their software.. you should become accustomed with it in time.

Not sure of your issue with the Buds, is it Design or Functionality? For instance enhancements have been made with the Galaxy Buds 3 Pro and whilst there may be different opinions I have been impressed.

None of these are what my problem is, so allow me to elaborate.
I can't remove the following from the quick panel: volume, play music, nearby devices, smqrt view, modes, and smart things.
The 3 button menu in the recent apps screen does nothing but show "show recommended apps"
I want NO digital assistant forcefully installed on my phone, but that is more likely on Google than Samsung so whatever.
I'm facing no issues with the earbuds i have. Sennheiser and Bowers & Wilkins were wonderful replacements over the wannabe airpods.
This company is so desperate to be Apple but most of us chose Samsung because we don't like Apple products.

Forcing design changes on something I paid over $1000 for is not something I'm ok with 🤷🏿. Security updates and UI changes are not the same and so the latter does not need to be mandatory.

Some of the quick panel buttons you have mentioned can be altered and removed under the same pencil icon we mentioned within the Quick Settings.
As for the horizontal and vertical scrolling we referred to under the 3 dots, this is within the app menu itself, not within the recent apps key on the navigation bar. The app menu is accessed by swiping up on the Home Screen, if you have your phone set to have an app's menu.
As @JAMES4578 has pointed out, you can achieve greater levels of customisation with the GoodLock app over on the Galaxy Store. Using the HomeUp module in GoodLock will allow you to customise your recent app's scrolling.

Did you really just try and gaslight me? I have attempted to remove those buttons through the pencil icon, the only option available it "touch and hold to change order".
I am also now discovering that several of my apps languages have been changed to Spanish as well.

Additionally I'm finding that the update has changed several apps to Spanish.
So your solution is to use additional software to solve the issues with a phone that I was happy with prior to an update I didn't want.

Somewhat agree but the updates didn't used to be forced and major UI changes definitely shouldn't be. So I'm in the mood to complain
