Hi I just got the one ui 5 beta 2 update, but I realised I have got a favourite album and recents album in my gallery that I can't get rid of.

Don't install it then, unless you can back everything up before you do deside to install it

Yes, I have the same. It seems to be the new Gallery set up

I still should be able to hide the albums if I want but I am unable to do it. Also the app icons for gallery and files have reversed to old icon styles

I got these after I installed to the new update, I should be able to hide or remove the albums from my gallery. I think it is glitch and hopefully fixed in next update.

I use Google photo's app as well as the Samsung gallery so you may have
better luck in there, the gallery app tens to have what your saying a glitch in it, I can't back up in my Gallery for some reason so most of my stuff I keep in Google photos.
