How to order apps alphabetically , and what is Bixby. (new user)

Hi, my first Samsungso be gentle with me.

Got an A70 and must admit the screen sensitivity is pretty abysmal (tapping away like a demented chicken trying to navigate), the typing experience is Slow, having to keep correcting and editing before sending. Moving contacts across from last phone.is still ongoing. The most frustrating thing though is that I can't find a way to order my installed apps icons alphabetically. I have over 100 apps and short of installing them alphabetically or shuffling them by dragging them I'm stuck with a jumble of icons. Am I missing something (other than my last phone).

 

Oh,  and what the hell is 'BIXBY'.  It's just there, and I keep opening it by mistake when swiping too far.

@Confuseddotcom: If you have a screen protector or case/cover attached to the A70, or even if you don't, please try going to Settings > Display > Touch Sensitivity > On. Also, if you go to Settings > Accessibility > interaction and Dexterity > Tap Duration, and reduce this number to it's lowest setting, this may help the responsiveness of the device.

If you want to reduce the amount of editing required while composing messages, please go to Settings > General Management > Language and Input > On Screen Keyboard > Samsung Keyboard > Smart Typing, and enable features such as Auto Replace, Predictive Text and Auto Spell Check.

To sort your Apps alphabetically please swipe up from the Home Screen to access your Apps Menu, tap the 3 dots in the top right and select 'Sort > Alphabetically'. Where are the contacts stored that you're trying to move over?

Thanks for the help.  Found the 'sort' setting - my biggest gripe.  

The others I will work through. 

I have now manually moved my contacts over, they were on the other phone memory - not saved to sim or sd card (lesson learned there).  Though I used it as an excuse to weed out all the unused contacts,  so not a total waste of time. 

 

I can see I have a lot to learn about the way Samsung think- I've used Huawei for the past 5 years, maybe my mind is conditioned to the way they think.

As fou gaming,  I play pubg and I do not find the screen too unresponsive for that. My issues is with tapping links.  My only gripe with gaming is because the screen had no bezel, as I hold the phone my palm,  and fingers that hold the side can cause erratic movements ans also delay on input.  If I lay the phone flat and don't hold it it's brilliant.
