I really love this phone and I have probably already taken few thousand pictures in normal mode with minimal optimalization. 12MP photos are pretty solid and predictable (you get what you see on camera preview) but high resolution photos can be really frustrating as you can never know with what you are gonna end up. Latest 23 feb updated didn't changed that.
First 200MP photos optimalization can destroy photo by adding weird artifacts around clounds on blue sky. Also they focus point most of the time is really small so most of the photo is usually blured comparing to other modes and they are also so much colorful then the rest but I guess I prefer that over wash out colors from 5x zoom 50mp photo optimalization.
5x zoom 50MP are photos unpredictable, you can never know what final result will be. Photo can look good or can look worse then in 12MP with less detail. Even when setings are on minimum optimalization the diference in light, shadows, color in pictures taken by the same camera with just diferent resoluton is huge. 12MP quite often looks better and more natural, saving more detail in light and shadow area.
5x zoom 50MP photos can have almost black shadows:

In less light enviroment 5xzoom 50MP optimalization can make very noisy backgroud and change almost whole photo:
Hope soon there will be some updates for how adaptive pixel and high res picture optimalization works.
Also I wish preview screen in photo mode in camera app worked so fast and seamless as preveiw in video mode

Noticed with some 200MP photos. The moment I take the picture I like what I see on the screen. Then the phone does some optimization that screws it up completely. And I need to re-take the shot. I know that those are pics you do not normally take (are you planing to print those out?), but still this is frustrating.

50MP in good light should never be less detailed than 12MP.
There was/is a bug from the S23U where the highres photos did not finish processing and sometimes resulted in an blurry/interpolated look. Maybe that bug is still present.

for the 200MP I think this is exactly what I have encountered several times.

Im not sure it is an unfinished process because in each of these shots I took several sample photos, sometimes 3-5 and they were processed with the same end result.

I agree that a 200MP photo is not very practical for everyday use (still I would prefer If it worked better with sky and clouds as it has great potencial for landscapes), but I would really want to have a stable 50MP camera for easy, fast everyday use, as the 12MP resolution is not that high, without wondering which camera will take a better photo or taking a photo with both just to be sure.

All in all, there is definitely something funky going on. Just took two 5x pics, one 12PM and another 50PM of the same object. Since its 5x, the 50MP camera was used to take the shots. Difference is just like you described. The 50 is brighter, but grainy/blurry compared to the 12MP. And considering the same sensor was used... this is bugging the hell out of me
