Pull down your notifications panel. Hold down/long press the auto rotate option. When it opens, select lock screen.

The suggestion from Bathaz works. After updating my S23 Ultra to One UI 6.1, I lost the AOD landscape functionality. However, following Bathaz's suggestion I long pressed the auto rotate button and enabled it for the lock screen. Once done, rotate the lock screen in landscape mode and then press the phone lock button to turn-off the screen. Now you'll have AOD in landscape mode.

I updated my S23 Ultra overnight and I am doing the same thing, holding the auto rotate button to go into the settings in there, and I can turn on Home Screen and Voice Call Screen, but for some reason "lock Screen" is grayed out. so I am wondering what other setting is hiding somewhere that grays out this function. so you are lucky.
**********
Update, it looks like it is tied to video wallpaper on the lock screen. If you have one then auto rotate is grayed out and AOD is now directly tied to the lock screen settings.
