I was on this forum recently praising the video quality of the S23U and the hiking up of it's bitrate over my old S21 Ultra to get more detail and better quality in video. I have not heard it mentioned in reviews that there is a setting in the camera app to DOUBLE this already impressive bitrate for ultimate quality in video BUT it results in big big file sizes much as is offered by the IPhone Pro Res video mode.
 If you go to advanced video options in your camera settings (whilst in auto mode) the second toggle down is simply called High bitrate videos. To access this mode there are two little hurdles. Firstly you can access this mode in settings ONLY from video mode on the camera. Try it from the default photo mode and you will be greyed out, with no way in even after selecting advanced video options in settings. Secondly, f you have selected the High efficiency videos toggle the High bitrate option will be greyed out and inaccessible, so this has to be toggled off first. Once this is all accomplished and High bitrate video toggled on, your videos bitrate ( the amount of data recorded in your video per second) will really Max out. In 4K 60 the bitrate on my 23U leapt from @70Mbit/s to @140Mbit/s. File sizes increase dramatically now. A 10 minute High bitrate video takes up 10Gb of space. 
 From my observations video in this mode is indeed rich and lustrous, but normal 4K60 on the phone is already excellent so it must be asked is it worth going for ULTIMATE video quality?. I think if you are planning to record something Professionally or for a big screen presentation then this mode is worth considering. Or just for a loved ones birthday and other special occasions. I would not use this mode all the time as it would eat my 512Gb storage too quickly and is overkill to be honest. It is just worth knowing that this option is out there guys and is worth at least experimenting with to see if you can notice the difference in quality yourselves. Oh, and yes, this mode can be used in 8K. It is also a feature on PRO VIDEO mode, but I was not aware you could access it in the standard video camera.

Think for a content creator, this would be a handy tool.
Though the file sizes would be huge I should imagine.
So connecting straight to a memory drive may well work

You are very welcome. The S23 Ultra has a gem of a video camera in my eyes. It is the one area I hoped Samsung would improve in this year and they certainly have.

Absolutely and to my surprise the stabilization is so good

The stabilization on the 10x zoom in video amazed me the first time I used it. It would have passed for having been filmed using a gimbal. The stabilization on my Exynos 21 Ultra did a fair job at 10x in video but there were jitters which I just accepted.

I've not had chance to even get hold of the S23 Ultra yet, in one of the local phone shops. It is very impressive. Are you finding a big difference in performance over the Exynos version of your previous phones?

Night and day difference over my Exynos S21 Ultra in terms of battery life and thermal control and video quality, and the display is even sharper and smoother and the camera is truly excellent aided in both photography and video by that well known Snapdragon stabilization. It just feels as if it is constantly showing me what Samsung can do when they only have one version of a flagship phone to build with one chipset on board. I can't stop smiling every time I pick the thing up!.. 🤣🤣🤣 Oh yes and it really does fly in speed tests and is lightning fast in the hand going through any task. 👍👍
