S23 Ultra camera changes the colors

I have tried lots of different settings on the camera and none of them give me the true colors of a sunset.  I was trying to get a picture of a beautiful pink sunset and got orange everytime.  My S21 camera took better pictures. The only way to get close to the true color is a video. 

Also, back in May I took a picture of the moon that was beautiful. I don't know what update might have changed things but now when I attempt to take a picture of the moon it's just a blurry image.

I wish I still had my S21!

Open the camera on the s23 ultra and click on the settings icon. Then turn off scene optimiser. Then go to galaxy store and download an app called camera assistant. Look for capture speed and select prioritise quality and turn off picture softening.

It's hard to get a more true to life image with such tiny sensors on phones. But Pro mode does help to try and get the colours better with adjustments.
Even better if you can use RAW setting. Then you can edit afterwards and still get a decent picture
I haven't yet used a phone that can capture accurately. What you get is a digital representation of how the software interprets the scene. In auto it takes many factors into consideration and displays a composit of all those factors

I did try pro mode and it didn't help with the color issue.  I have not tried RAW. And I am going to try what Whatttt said. Thanks. 

The S21 was better at being closer to the actual colors you are looking at.

Well as it turns out I have already turned off the scene optimizer. I will try downloading the other app to see if that helps me.

Okay download good lock from galaxy store and get camera assistant from there

And theres an app by Samsung called expert raw which takes natural pictures

I don't know when you had your S21, but I'm using the S21 ultra and it takes bad pictures. They come out blurry and grainy. My old Note 8 took better pictures. Like you said about an update that messed things up, same with the S21.
What's really annoying is when you bring the issue up about the camera, you are told to try pro mode or clean the lens, download this app, change this settings etc.
When you pay big money for a phone you shouldn't have the need to change this setting or download that, just pull phone out, point and shoot like other phones.
