Unfortunately, this issue very often happens under the beta software.

Every beta version is different it may work before and it may not work in the next version. The reason why it states that in the warnings information before you go ahead and install it.

It's working on my phone, S25U, I know it's unpleasant, it's helpful to leave feedback on this and post it on the Beta Forum. At the beginning of Beta there were warnings that Google Wallet is not working on Beta. You can check if the app needs updating on the PlayStore and make sure you have the latest version. Samsung wallet works fine for most users though.

There are always some with issues though the numbers affected can vary between Betas.  Warnings are given before you sign up, if Google pay is vital Betas are not really advised.

Always pays to read the warnings and terms and conditions of something carefully before going ahead
As its a beta software and not an update, you get plenty of warning before signing up.
Every beta software is different. This can work sometimes when you sign up, then stop working after a beta update
