Music on my car not automatically connecting

Hi guys, sorry if the title is confusing but no idea how else to say it.
This subject has been covered on quite a few forums but for me nothing worked.
My issue started a few weeks back. I have a Mazda 3 2011 and a Samsung S23 Ultra.
All working fine until one day got in the car and the music via Bluetooth option was gone, but not the calls. I was still able to make and answer calls wothout any issues. Both Calls and Audio are turned on when the phone connects to the car.
So believing there is a fault with the pairing instance, I've disconnected the car from my phone, remove the phone from the car's system and repair. Same result.
Started taking more drastic steps, I've replaced the bluetooth module, did nothing. Replaced the audio system, did nothing.
Then searching left and right on forums what is happening. About 1 year ago some people started posting same issue and diferent solutions that worked for them.
So I've started messing about with my phone's settings, pair/unpair like 100 times. Reset BT settings, reset wi-fi and BT settings, turn on and off "Connected devices/ Continue on other devices", tried music share under Connected devices (added my car as one), mess about with Android auto although my car is to old for that, but none worked.
My last hope was, pairing my wife's S22+. Guess what, same result.
So I can listen to music if I toggle off and back on the "Audio" option under the connected BT device device (my car), and it wouldn't be such a big deal if I have to do it evey time I go in the car, but the connection is not stable and the music option sometimes disconnects while I'm driving. Again, phone always works.
Looking for any ideas to try.
Even if it looks like I did try it, please put the steps in maybe I missed something.
No idea is a bad idea at this stage

I just had the same thing start up a few days ago with my 2010 Mazda3 and Samsung S23 Ultra. When I start the car, I can go into the setup on the phone and turn AUDIO back on and it works until I turn the car off.  Then I have to go through it again the next time. This happened right after the phone did an update a few days ago and I wonder if there is a connection?  The phone calls still work fine.
