Which apps are we talking about here may I ask @Geguti21
In short no an app shouldn't uninstall itself however first go and use the search bar to look for the apps please.
First try a soft reboot by turning the phone off and on.
Look in Settings > Apps > Tp see if these apps still show.
If your using a 3rd party launcher then try using Samsungs own to see if that helps.
Try something similar to > Settings > Apps, Look for One ui home > Choose it , Clear storage and data.
This is a generic troubleshooting step > Clear Cache Files from the phone's System Partition Section > https://www.samsung.com/uk/support/mobile-devices/how-do-i-clear-the-cache-on-my-device/ You may need to insert your earphones or hook upto a powered On Laptop or use a Tv's USB Port to access the Clear Partition Section. This may help with lag or stutters as this clears the phone of old/unused or broken cache files.There is also a Repair Apps option in the Menu System too.

I'm having this problem also. The parenting app Bark for kids. Randomly un-installed off my phone. Is there anyway to find out why?

Same problem with my phone.
ES File Explorer 4.2.9.2.1 keeps on uninstaling by itself.
Play protect is off.
One UI 6.1
