"My Samsung S23 Ultra running One UI 6.1 no longer has the 'Recent Items' section in the Gallery app. The albums are all disorganized, and the Camera folder is filled with unrelated photos and videos. Even after restoring from the backup on my computer, the issue remains unresolved. What should I do?"

If you head to Gallery > Albums > the three dots (top right corner) > select Essential Albums, you may find that it has been unselected and won't show. If that doesn't solve it, please let me know, and I'll troubleshoot further. Thanks!

Nevertheless, if you tap the three lines button, there is something called recent. As for organising media on your phone. I recommend using the file Explorer to do so. Also, the apps that produce media allow you to choose where to save the files (the camera, voice recorder, screan snap, WhatsApp....)

Only problems with the essential albums view being activated, is that it restricts showing every thing
