It's not really feasible to try and go back to the previous software.
You can customise the gestures by downloading the Samsung Goodlock app with the Navstar plugin. Available from the Samsung app store
The gestures are something that Google has implemented to accommodate the new AI features. It's all part of the Android operating system.
