I think you may have diagnosed the issue yourself regarding your back up.
First try https://www.samsung.com/uk/support/mobile-devices/how-do-i-clear-the-cache-on-my-device/ You may need to hook up to a Computer or insert your earphones to enter into recovery mode.
If this was situation and the above didn't help I'd consider factory resetting and then set the phone up as new and then download your apps direct from the Playstore MyLibrary and then see what happens @OnlyO

I have the same issue, my current theory is that it's a bug with floating chat bubbles.
I use Telegram with chat bubbles, activities in there crash fairly often. I noticed today that, as it happened again, it was at the same time as yet another Telegram bubble crash.
The problem went away as soon as I received another Telegram message that respawned a bubble, and I opened it.
I sent a report through Samsung Members, in the meantime, if you're also using chat bubbles, I'd say try disabling them, and see if the problem ever reoccurs.

I know this is a very old thread, but for people coming here from Google like me, I'm having the same issue on my Fold.
You are absolutely correct about pop-up bubbles! I've been dealing with this since this phone was released, and finally got tired of it and decided I was going to find a solution.
After much internet sleuthing I came across your post, and the problem was, of all things, Pokemon Go in a floating app. And I don't even use the keyboard or back button in there!
But closing the pop-up windows completely fixed both my back button and my keyboard immediately. Go figure.
And thank you so much for sharing your experience, as it led to a reliable solution for me (and hopefully others with this confirmation)!

For future visitors from Google, keep reading below, it's definitely not related to backup as I have the same issue on a completely fresh phone that has never been backed up and never been restored.
