That's strange. To restore any deleted contact(s), open the Contacts app > Tap on the 3 lines (top left) > Recycle bin > Tap on Edit (top right) > Restore (bottom left).

I'd like you to clear the cache from the Contacts app. Open Settings > Apps > Tap the sort by icon next to ‘Your apps’ and make sure it's set to 'All' > Select the Contacts app > Storage > Clear cache (bottom right).
