Which update is this, did not think One UI7 was expected for any A Devices at this point. Are you getting any error messages?
in any case there can be server errors which are eventually resolved. Do you have sufficient storage space, it is recommended to have at least 50% Battery free for updates. Have you tried both wifi and Data (as long as you have large Data Allowance), does there not appear to be any issue with the internet connection and does restarting Device make no difference? could try in Safe Mode but may not necessarily fix it. https://www.samsung.com/uk/support/mobile-devices/how-to-start-my-galaxy-device-in-safe-mode/
