@crb56: If you have downloaded a file attachment from an email, then please swipe up from your Home screen > Tap on the Samsung folder > My Files > Download > Press and hold on the file > More > Open with > Choose from the available options > Select 'Always'.
Alternatively, please head to Settings > Apps > Tap the 3 dots in the top right > Reset app preferences, although please be aware that this will remove any personalised settings from all applications.

@crb56: Are you accessing your emails via an app, or a browser? If you're using an app, please can you verify which one you're using? In the meantime, as a workaround, download the PDF file rather than opening it via the email, and you can use the steps provided in my original response to open the file in your preferred PDF viewer.
