What is the point of the latest s10 update,google pay no longer works and Samsung pay doesn't accept my bank... making me think it's time to give up on Samsung

This is an expected behaviour during the Beta Programme.

Since this is still a beta software and not yet an official Android 10 binary, Google doesn't recognize it as "certified".

This information is available for you right under the registration banner for the Beta programme.

Official version of One UI 2 will not have this problem, but during the beta it will not work.

It's not an issue is part of joining the beta program

So, I got around my bank not being supported in Samsung Pay by getting a Curve Card which is free and then linking all my cards to that one card and using that to add to Samsung Pay and it works fine, you use Curve app to switch which card you would want to pay from.
