Of all of the One UI 7.0 aesthetic changes, this is the one that I find to be a step in the wrong direction. As with other commenters, I don't think the "%" symbol is necessary, but the font size and color choices are a combination that makes it harder to read - which means users spend extra time looking closely at the value. For example: my phone is currently at 60% and the display (when not zoomed in as in the attachment) has the "0" split by the color differences of the percentage gauge and requires a double-take). At first glance I thought it read "69" or "66". This wasn't an issue with any prior One UI versions.
