I noticed after upgrading that Google pay doesn't work

It is literally the second bullet point in the announcement that Google Pay does not work on the beta version of One UI.

I believe software needs to be validated by Google before the app can be used.

You can temporarily switch to Samsung Pay till Google resolves the issue.

I understand that this caused you some confusion. During the Beta Programme not all apps will work as expected, this particularly affects Google Pay, which needs to be certified by Google. Nevertheless, it is assumed that this problem will be resolved with the release of the official software version.

The pre-install notes said Google Pay would not work, which actually highlighted how much I've come to rely on the functionality. However, I've now set up Samsung Wallet (was Samsung Pay), and was pleasantly surprised. It looks every bit as good as Google Wallet/Pay.
