Non Samsung accessories on Samsung health

Why do they not work? Garmin smart watch and HR.

If it is Samsung forcing purchase of their products, then bye bye.

It's not forcing. Just Samsung products are naturally going to be more optimised to work with the health app
But as @AndrewL has said, third party products will connect
I got the Huawei Watch GT3 to work with it, with some fiddling as that's a HarmonyOS operating system
