Hello @GracesDad and may I extend a Warm Welcome to the Samsung Community Forum 👋
The only issue I faced at first was that the battery didn't last as long on my Watch, but that soon settled.
You could clear the cache of your watch to see if that helps.
From https://www.reddit.com/r/GalaxyWatch/comments/1bo0nq2/reminder_to_wipe_cache_after_updating
"
With the watch on, hold both side buttons until it turns off. Should be about 6 seconds.
As soon as it turns off start pressing the top button repeatedly until the bootloader menu appears.
using the top button, select "Recovery mode" and hold the top button until the watch reboots onto the recovery mode.
Be careful here. Use the bottom button to select "wipe cache partition". Be very careful not to select anything else.
Press the top button to confirm.
Press the bottom button to highlight "Yes"
Press the top button to confirm.
Once it's done wiping the cache it'll return to the recovery mode menu and it'll have highlighted "reboot system now".
Press the top button to confirm and it'll restart. "

The advice I offer is my own and does not represent Samsung’s position.
I'm here to help. " This is the way. "

Looks like I am facing the same problem after latest update to UI6. My galaxy watch 5 pro used to respond swiftly to all touch actions and waking from sleep. Now doing any action causes watch to freeze for a moment, animations are laggy.
I bought 5 Pro to make sure my watch will work well for a long time (the same reason I buy Ultra series when it comes to Samsung smartphones). I am really disappointed of Samsung. I feel I am being pushed to buy a new device despite 5 pro could last much longer.
