Word that the Stable One UI 8 update for the watch 7 has stared rolling out in South korea, Beta participants are the first in line. obviously this was not an option for Uk users (US was other only market where it was available)| but it seems should not be too long before it rolls out more widely. However there is not anything definitive on this at this point so we will have to wait and see. There is no official timeline.
