I am unable to connect my watch active 2 to mobile network. Keeping getting error that mobile service is not available in my region.

Clearly a samsung issue.
Once the esim is programmed, it keeps its settings even when you choose to pair with a different phone. So after loading with the iphone you can switch back to your samsung phone.
When your phone goes out of range on bluetooth, the watch switches on 4g (after a minute or 2) and can then act as a phone and use data independently. When back near the phone it reverts to BT.
