Mine doesn't and I can't see an option for it on the 'Sound' menu. Is this normal?

I think it is. S25u doesn't have it either. Can't remember if any Samsung i owned had it. Motorola on the other hand

Another really useful feature for blind people that seems to have disappeared. I'm trying to get an elderly relative (who is blind) used to a tablet, and the number of simple audio cues that no longer seem to exist amazes me, e.g. Google removing the sound to show that 'Hey Google' has heard you and is listening. I know that many, many people complain about these annoying noises, but surely there must be space for an override on the 'Accessibility' menu for those that want to switch these useful sounds on.

You still can enable the Google Assistant listening sounds (at least on mobile, so I hope tablets can too!). I went into the Google Search app > account > Settings > Google Assistant > Accessibility. There's also an option for an audio cue when it has finished listening. I have this on my Nest speaker too.1756629871145.jpg

I'm an occasional user of Talkback - this might have some more audio cue options?

I've tried using Talkback, but I find it doesn't work very well at all and is very tricky. I tried it with my aunt and it was nightmarish and virtually impossible for her to use.
