I'm aware you can click to resize, it appears all my folders are now opening by default in a minimised state, only appears to have happened recently. Any idea how to make sure all folders open full screen?

Swipe down to access quick settings panel and check if DEX is not enabled.

Amazing, how did you come to that conclusion and do you know what that happens? Exiting dex resolved the issue

It looked like you enabled DEX from the screenshot. Sometimes, it could happen for unknown reasons or like accidental touch. Glad it solved your issue 😊
