Samsung Calendar on phone

Can you please put an option of a photo for the event. 

For example:

I add to the calendar:

Doctors appointment - 9am

I then take a photo of the letter for the appointment and attach it to that appointment in my calendar or a screenshot of the e-mail information for that appointment to add to the appointment in my calendar.

This is already possible. When creating an event in Samsung Calendar, choose My Calendar. You will see an option to add attachments.

Change the calendar from your email id to "My calendars".
