Ever since I've done this beta update when my screen is locked and I recieve a email or message I can't see what it says it say content hidden?.

go to settings lockscreen notifications the settings are there for how to display

I get the accidental touch protection message when I try clicking on one of the icons after receiving a notification but don't get the same when attempting to unlock using a fingerprint.

Please, enter the Settings app > Lock screen > Notifications > and turn the 'Hide content' option off 😉.
