SIM Manager not working S21+

Since last update (27th July one UI 6.1) I've had to remove the SIM that was in slot 2 as it was taking over all calls data etc... I've tried everything swapping the SIMs, replacing SIM2 with eSIM. Phone has been restarted countless times... Husband's phone (S21 Ultra) is the same. 
2nd SIM has been removed prom phone and SIM Manager doesn't show it but it works...
I haven't done a factory reset but I'm tempted.

Hi,and welcome to the community

Before you do a factory reset, try a hard reset first

With the device powered up, Hold the Volume down button and Power button simultaneously for 10 seconds. The screen will go off. Continue to hold buttons until the device vibrates and the Samsung logo appears. Release buttons. Device will reboot. Once done, please check if the issue is resolved.

If not resolved, then try resetting all settings

Settings >general management >reset >reset all settings

If still not resolved, then by all means, consider the full factory reset. Backup first.

No, but then I didn't do the factory reset. I'm just switching the ESim on when I need it.
