I'm trying to play Bluetooth audio from my S21 to 2 pairs of headphones. All the guides say to hit the 'media' from the pull down menu but I don't seem to have this option. Could it be hidden somewhere or is there another way to set this up?

Check if it's hidden. Edit the Quick settings menu and select 'Show when quick panel collapsed' for Device control and Media output buttons section.
