Why does my battery go down quickly but other times go down slow

Depends on apps used.

This can be attributed to how the phone is performing when it comes to apps , background processes, location based apps,  signal strength and user usage @Dylan34569 

Your Battery and Device Care Section under Battery will show you what's using your battery in regards to apps.

Troubleshooting Steps such as this can help > Clear Cache Files from the phone's System Partition Section  > https://www.samsung.com/uk/support/mobile-devices/how-do-i-clear-the-cache-on-my-device/ You may need to insert your earphones or hook upto a powered On Laptop or use a Tv's USB Port to access the Clear Partition Section. This may help with lag or stutters as this clears the phone of old/unused or broken cache files.There is also a Repair Apps option in the Menu System too.

It also depends on screen brightness and whether your using 4G 5G or WiFi

It's varies on your usage pattern. But me having an s21 that my dad gave me. 2 years old 5G model i have the same issue. Putting unused apps into deep sleeping or either sleeping may help apps not run in the background.
