I cannot deal with the visual and practical changes that came with the One UI 7 update. Things like changing how the top bar/status bar looks with playing music or the battery, changing how app icons look, changing the look of the widgets on my home screen, changing the look of recent apps in the app overview. I have configured my phone in a way that I like, and every single time there comes a big Samsung update they go and make it ugly again and make me do a ton of work to make it passable.
Practical changes is also a problem but a lesser one, at least when you start the phone they go through the changes and you have the option to immediately turn them off. Though I do hate how they're trying to force AI on to me.
The very least they could do is provide an option to roll back the visual changes. Samsung's lack of respect for me and how I don't want sudden visual changes to my phone is not something I'm willing to put up. My next phone will not be a Samsung.

No it is not possible to downgrade the software by official means , it may not be possible in any case and is not advisable.
If you swipe up should see your apps. It is also possible to change your Home Screen layout to Home Screen only other than Home Screen and Apps screen. See attachments here
