@Ferenc75: Please can you confirm the model number of your Galaxy Watch, and the connected mobile phone? Furthermore, what happens when you attempt to access Google Assistant on the watch? Do you get any error messages or notifications? In the meantime, please try restarting both devices to see if this helps to restore the feature. I also recommend taking a look at the link below from our friends at Samsung US for further guidance.
