Once you have the framework for a new account set up, then you can use a web browser to login to your old account... select manage... and then delete.
https://v3.account.samsung.com/dashboard/profile/account
It should be a simple transition.

If you go to Accounts and Settings-Samsung Account-Profile-Profile Information-Account ID-Email. Tap on that, is there an option to change email?
Otherwise could try via the web as suggested where there should be a number of options https://www.samsung.com/uk/support/apps-services/recover-your-samsung-account-id-and-reset-your-pass...
However if issues with accouns can not be sorted the Accounts Teram is the port of call.
