I did the new update on my Samsung Galaxy and all of my bookmarks on Samsung internet somehow deleted. How can I get these back? I did a restore to an earlier date and they did not restore. Please help.

My solution was to discontinue using Samsung Internet browser. I lost nearly two years of new bookmarks after a phone update on my S20. I never had this issue with my S7 that I used for several years prior to getting the S20.
I was able to push my bookmarks (the ones I had collected on the S7 over several years prior) to the S20 using SMART SWITCH. The first time or two the newer bookmarks did "reappear" on the S20 after pushing them over from the S7 again. I put up with it a total of 4 or 5 times. But the S20 still spontaneously dumped its bookmarks and tabs upon additional updates.
There were several service tickets opened thru chat and a couple phone calls with tech support. Nothing that was suggested to try was successful at fixing the problem that kept persisting until I finally got disgusted enough and switched to a different browser(which does allow exporting bookmarks for backup, as well as syncing over the web to my desktop browser on my PC) I haven't looked back. It's been about 2 yrs or so, and I've not used the Samsung browser since. Very disappointed in Samsung on this issue.

Did you ever find out how to access the Samsung Bookmark folder? I did what you researched, creating a new folder and went to move it and I can see the Samsung Bookmark folder with all my bookmarks in but can't figure out how to access it.

I have just researched a bit now and i might have a work around
Try this:
Go to setting on your Samsung Internet - Layout and menus - toogle show bookmarkline
Now go and save a random bookmark, save a second book mark, now on the right side of the bookmarkline there are 2 arrows, press that one
Chose edit bookmarkline - now you can choose your bookmarks to edit/move etc, but just -press the "return"/"back" on your phone
Now on the top you can choose the folder "Samsung Bookmark" all your bookmarks should be there
Now instead of doing this all the time, move all your bookmarks from Samsung Bookmarks folder to Bookmark folder
