Update:
The cause of the fault was due to a fault in the wiring harness somewhere between the top of the freezer door and the connections to the ice dispenser. As the wiring harness wasn’t a serviceable component (as harness is moulded into the freezer door insulation) and there were no replacement freezer doors (unit discontinued), we ended up having to replace the entire fridge freezer.

The flap on the ice dispenser (which keeps the hole closed when not dispensing ice) is constantly opening and closing. I've removed and unit (and display panel) from the fridge / freezer. I tested the two switches on the rotating part (which I assume is now the freezer knows when the flap is open and closed) with a multi meter & it would appear that that two switches are still operational.
I suspect that there is an issue with the wiring harness in the door as when you move the door, you hear a "cracking" kind of sound. If you stop moving the door at certain points, the flap stops moving (& the LED display lights up, as if it was being reset). If moving the door a little more past the point, the flap starts moving again and the LED display turns off.
Does this sound like a wiring harness issue, or something else?

Check to see if your ice maker holding the ice isn't frozen over/backup with ice.

The cause was a faulty wiring harness. A wire had broken somewhere within the freezer door. Had to replace the entire fridge/freezer as the wiring harness is not a serviceable component (as it is moulded into the freezer door) & there were no replacement freezer doors (unit discontinued).
