Voice Prompting when locked

What I loved about my iPhone is that at any point I could use the Hey Siri prompt to instruct the phone to carry out a task.

I drive a lot so this was extremely useful.
Why can't I do this on my S25 Ultra? 
I have my Buds 3 Pro in while driving:
"Hey Google, call Dad" or "Hey Google, send a WhatsApp message to..." for example are pretty basic instructions but all I get is an annoying Gemini pop up saying I need to unlock my phone first. Also if I use "Hey Google" for anything, the AI voice is barely noticeable, its very very quiet which is no use to man nor beast.

I can't seem to find any settings either to change anything. The S25U is starting to annoy me. 
I dont want this Gemini, nor Bixby.
My old iPhone used to just do everything with a prompt.

How do I set it up to just be seamless?
Seriously considering going back to iPhone just because it was so intuitive, this is a chore.

I've turned off Gemini and just use Google Assistant, as I'm not a fan of it. Google Assistant works much better when driving, too. Also, you can change the Assistant's volume within the volume settings; I have a routine that turns this to 100% when I connect to my car.

You'll either have to use Gemini or Bixby soon as Google is shutting down the Google Assistant app later this year. You should have struck with the IPhone.
