How the heck do I stop OneUI7 telling me what to do? 

For example, if I highlight something or add a photo to my clipboard, it overlays a big bubble that says "Copied. You can paste on this phone or connected devices"

Every single time!

I know this - make it stop!!!

Have you tried turning off notifications from the Tips app? (Settings->Notifications->App Notifications->Tips).

Thanks for the suggestion, but it's not set to ON.

You can change the duration of this by going to settings > accessibility > advanced settings > time to take action > select time.

It's set to default and that's the shortest. 

There must be another way to stop these idiotic things appearing ever time I copy something

If it's due to the tips app, you could uninstall that.
