I know what you mean, I can not find it myself in the settings. May be they have done away with this option.

I have watched alot of reviews, however I don't have all the right words, so I got some AI help and I will post it here for you.
I hope it helps with your query.
AI Overview

In Samsung's One UI 7, the status bar typically displays a maximum of three notification icons before a dot appears, indicating more notifications are present.
Here's a more detailed explanation:
Icon Limit:
You'll see up to three notification icons in the status bar, representing different apps or system alerts.
"Dot" Indicator:
If you have more than three notifications, the status bar will show the three most recent, and then a dot will appear to indicate that there are more notifications waiting to be viewed.
Accessing All Notifications:
To view all notifications, swipe down from the top of the screen to open the notification panel.
Live Notifications:
One UI 7 also introduces "Live Notifications" which are displayed as a pill-shaped icon in the status bar, indicating a running live notification (like a timer or music player).
Now Bar and Brief:
The "Now Bar" feature on the lock screen can display live notifications, music, and modes/routines, while "Now Brief" provides a personalized briefing of selected content.
Split Notification and Quick Settings:
One UI 7 separates the notification shade and quick settings menu, with swipe down from the top-right opening quick settings and swipe down from anywhere else opening the notification shade.
