All devices are vulnerable to attacks, we agree there. However, security issues are disclosed after a period of being detected, allowing manufacturers to fix them. Meaning, hackers will be more actively looking for devices affected by them and probabilities of them being exploited are greater than a random security issue which has not been detected.
Following the logic of not updating because of features being removed, means that you will never update. It is very likely that if a feature is removed on update B, it will also be missing on update C and all subsequent updates.
Which required feature was removed? Are you sure that it has not being moved to another setting? It is worth noting that the S25 series was released with One UI 7, it was not upgraded from 6.1.
Anyway, if you feel you should not upgrade, then don't. Your device, your decision.
