I agree with you, the notifications' size is it too big. I prefer a slim size.

Oh honey, some of us are driving or riding a motorcycle/bicycle while these important notifications come in, and we need to be able to see the whole of them at a glance. It was possible before, it should still be possible now. Why did we pay for a very expensive and high-end phone only for it look like a kid toy with big colorful notifications every passerby can now read.

Oneui 5 is when they actually made it suitable for one hand, and it wasn't all this blurry and futuristic, it just looked simple and nice.

For anyone wondering, you can increase the Minimum Width from the default setting in Developer Mode. If you need to know how to turn on Developer Mode, there are a gazillion Internet resources so Google will tell you instantly. I personally think 480 is a good value. It does shrink the font, so you can increase the font size separately if you want.
Of course, it would still be better if One UI 7 had the ability to do this without the use of DevMode.
PS. This came from a Reddit thread I found on the topic.

Don't you call me honey, honey 😂🤭😋.
Split to notification and quick panel that how you will see all your important notification. I can see more notifications now than on OneUI 6.1 😂

You're right, but I prefer shrinking it down even more so that it at least looks like it provides more notifications in one swing than it currently does. In my opinion, the splitting of the quick panel does not justify the dramatic increase in gap spacing and the bubble sizes. You and everyone else has the right to disagree with this, but I just think it all amounts to one good UI design decision that is then immediately followed by an extremely poor UI design decision.

So why you not use any third-party launchers if you don't like OneUI? Nova, Edge, etc etc, there's plenty of choice in Google Play Store. 🤷♀️ iPhone can't do that

A single 1-minute change inside Developer Mode fixes all of it. Source: https://xdaforums.com/t/samsung-ui-too-large.4654114/#post-90135986
I assume you're asking why because you realize that the only available solution is like taking out a sledgehammer to swat a fly in my own house, when I could just move into a new house.
My answer to that is, it's my personal choice. (As it should be for everyone else here.)
